Happy Monday Friends! Can you believe we’re already in November….my BIRTHDAY month! Yes, I am one of those who celebrates AAAAAALLLLL month long! #sorrynotsorry
I am so excited that the air is changing, & the cold weather is slowly rollllin’ in. My favorite fall look is some booties & a long sleeve under a jumpsuit. Which is why I had to swipe THIS one up when I saw it on sale this week! I’ve literally lost track of how many I own now, but I ain’t mad about it….Jay might be. Oops, again, #sorrynotsorry. THESE booties, I got as an early birthday gift to myself & I can already tell ya they’ll be on repeat this season!
With the fall coming, it’s darker earlier…which for some reason makes me not want to cook… more than I already don’t want to cook! But, I got a whole house full of people so I gotta cook something! So I love super simple, easy, & FAST meals that everyone…including Picky Crew, will eat!
I grew up on chicken & steak, pasta, spaghetti, taco salad; super yummy and simple food but made me not venture out to try anything that smelled weird, looked weird, or that my mom didn’t cook! Guys, I barely tried sushi for the first time 4 years ago…and even then it’s only a veggie roll.
When Jay & I were newly weds, living up north, I used to go visit my cousins weekly & eat dinner with them when Jay was at the shop late. By eat dinner, I mean it was usually Taco Bell drive thru…cinnamon twists for dessert! But some nights my cousin would cook for me & she taught me this amazing recipe that I mastered over the years…I don’t even have to look at the recipe card anymore!! And we’ve been obsessed ever since! So surprised I even tried it, but as a new wife I wanted to learn how to cook food for my home, and this was a great beginning recipe; Jay was surprised I even tried it too!! But here we are 10 years later and I’m still cooking it, & now my kids are eating it!….well everyone but Crew.
6 tablespoons of butter
6 cloves of garlic
1/2 teaspoon ground sage
2 tablespoons chopped parsley
1 pound tortellini
1 teaspoon salt
In medium frying pan melt butter- add garlic and cook stirring & mashing garlic till soft & golden (10-12 minutes) Just watch it, the garlic can burn super fast depending on the stove! When garlic is golden brown it’s DONE.
stir in sage, salt & pepper
In large pot of boiling salted water cook tortellini until done (12 minutes if frozen) drain water and return to pot.
Add butter & parsley and toss together over low heat until pasta is thoroughly coated. About 1 minute.
And that’s it! Throw together a quick salad, or some breadsticks & enjoy!
