Taco Salad


Happy Wednesday friends!! I don’t know about you but I am so ready for the weekend…..thank goodness it’s Hump Day!!!

Usually by Wednesday nights I am over cooking… already did Monday & Tuesday night & now, I’m done, ready to call it quits and doordash some mexican!

So for Wednesday’s, I try to keep it simple, and fast! I saw a recipe similiar to this one years ago & over time kind of just tweaked it and made my own! I do this taco salad on the nights I’m too tired to function! It’s so easy & everyone loves it!…..except for Crew ‘cause well, it’s Crew. #CrankyCrew

I love a good taco salad! We grew up having this aaall the time & it was always my favorite, and thank goodness for my parents it was cheap and could feed an army ‘cause let’s face it everyone and their mother ate dinner at our house a couple times a week! But since the last few years of switching my diet up & trying to be cautious of healthier meals for me and the fam I decided to put a little twist on it & make my own “Healthy Taco Salad!”

Just a few simple ingredients, a side of diet coke & dinner is served!

Healthy Taco Salad

  • 1 lb of ground meat, with half packet of taco seasoning

  • Black beans (I use a large can because we all eat the beans

  • Trader Joe’s Black Bean Quinoa chips

  • Trader Joe’s Cilantro dressing

  • Shredded Lettuce

  • Avocado, hot sauce,olives…etc for toppings


  1. Cook meat with half a packet of taco seasoning. At the same time drain can of black beans…

    -Little tip from my mom… add a little bit of chicken stock & garlic powder and it makes the beans taste sssssoo delicious! Let it come to a boil and then simmer till meat is done.

  2. That’s it!! Mix it all together and enjoy!

For my bowl I put a layer of crushed chips, then add meat & beans, lettuce, avocado & black olives, and top it off with the amazing TJ’s cilantro dressing!

  • For Jay’s bowl I make it the same but add cheese, tapatio, brown rice, and some jalapenos! So far he hasn’t complained! But the man eats taquitos from 7-11 so I shouldn’t brag too much.


Voila Ladies & Gents! Grab a marg, a diet coke….whatever you need to celebrate that we made it to Wednesday & enjoy!
